INGREDIENTS
 

  • 2 cups Medjool dates, pitted, (approximately 22 dates, 330 g)
  • ¼ cup coconut oil, melted, (56 g)
  • ½ cup plant-based milk
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt

INSTRUCTIONS
 

  • In a small bowl, soak the pitted Medjool dates in warm water for about 10 minutes to soften them.
  • Drain the dates and transfer them to a food processor or blender.
  • Add the coconut oil, plant-based milk, vanilla extract, and a pinch of salt to the food processor or blender.
  • Process or blend the mixture until smooth and creamy. If needed, scrape down the sides and blend again to ensure all the ingredients are well combined.
  • Once the mixture reaches a slightly thick but smooth consistency, transfer it to a jar or airtight container.
  • Store the date caramel in the refrigerator.

NOTES

  1. For a smoother blending process, it may be easier to use a food processor or a high-powered blender. You can also use a hand blender.
  2. Soaking the dates in hot water before blending can help soften them, especially if your blender is not very powerful. Remember to drain the soaked dates before using them in the recipe.
  3. Customize the consistency and flavor of the date caramel by adjusting the amount of plant milk and salt to suit your taste.
  4. Store the date caramel in the refrigerator in an airtight container for up to two months.
