INGREDIENTS
 

Cake

  • 1 ¼ cup all-purpose flour, (150 g)
  • 1 tablespoon corn starch, (8 g)
  • 2 teaspoon baking powder
  • 1 ½ teaspoon cinnamon
  • ¼ teaspoon salt
  • cup canola oil, (80 ml)
  • cup brown sugar, (100 g)
  • cup applesauce*
  • ¼ cup dairy-free milk, (60 ml)
  • 1 teaspoon vanilla extract
  • 1 ½ cups carrots, grated, (195 g)
  • ½ cup roasted nuts, chopped, (50 g)

Crumble

  • ¼ cup coconut oil or vegan butter/margarine, (56 g)
  • ½ cup all-purpose flour, (60 g)
  • 6 tablespoon brown sugar, (56 g)
  • Pinch of salt

INSTRUCTIONS
 

  • Preheat your oven to 350ºF (176ºC). Grease and dust a 7-inch round cake pan or square baking dish and set aside.
  • In a medium mixing bowl, whisk together the flour, corn starch, baking powder, cinnamon, and salt. Set aside.
  • In a large mixing bowl, combine the canola oil, brown sugar, applesauce, milk and vanilla extract. Mix well until the sugar is dissolved.
  • Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Be careful not to overmix the batter.
  • Fold in the grated carrots and chopped roasted nuts until evenly distributed.
  • Pour the batter into the prepared cake pan or baking dish, smoothing the top with a spatula.
  • Prepare the crumble topping: In a small mixing bowl, combine the coconut oil or vegan butter/margarine, flour, brown sugar, and a pinch of salt. Use a fork to mix the ingredients.
  • Evenly crumble the topping over the carrot cake batter.
  • Bake in the preheated oven for 40-45 minutes, or until a toothpick inserted into the center of the cake comes out clean or with a few moist crumbs.
  • Allow the cake to cool in the pan for 10-15 minutes before transferring it to a wire rack to cool completely.
  • Serve the Vegan Carrot Crumble Cake at room temperature with a glass of your favorite plant-based milk, and enjoy!

NOTES

*If you want to make the applesauce, boil 1 large peeled and chopped apple (without the core or seeds) and blend with 1-2 tablespoons of the same water in which they were boiled.
