4-Ingredient Vegan Almond Flour Cookies (Gluten-Free)

Delicious and wholesome 4-ingredient vegan almond flour cookies that taste like heaven. Experience a great nutty flavor, delightful texture, and completely gluten-free, dairy-free, egg-free & refined sugar-free.
Preheat your oven to 355°F (180°C) and line a baking tray with parchment paper.
In a bowl, combine the almond flour, coconut oil, maple syrup or agave, and vanilla. Mix until a homogeneous dough forms.
Refrigerate the dough in the refrigerator for 20 minutes. This step will make the dough easier to handle.
Place the dough between two sheets of parchment paper and use a rolling pin to flatten it to a thickness of about 5 mm.
Using a cookie cutter or the rim of a glass, cut out circles from the dough. Gather the excess dough, roll it out again, and repeat the process until you've used up all the dough.
Carefully transfer the dough circles to the prepared baking tray, ensuring you leave enough space between each cookie.
Bake in the preheated oven for 10-12 minutes, or until the edges are golden.
Once baked, remove the cookies from the oven and let them cool completely on the tray.
If desired, you can decorate the cookies by adding melted chocolate on top or dipping half of each cookie in the chocolate.
NOTES
If the melted chocolate is too thick, add a teaspoon of coconut oil to achieve a smoother consistency.
