4-Ingredient Vegan Almond Flour Cookies (Gluten-Free)

INGREDIENTS
 

  • 1 cup + 2 tablespoon almond flour, (129 g)
  • 4 tablespoon refined coconut oil, (56 g)
  • 3 tablespoon natural maple syrup or agave
  • 1 teaspoon vanilla
  • 70 g dairy-free chocolate, melted, optional

INSTRUCTIONS
 

  • Preheat your oven to 355°F (180°C) and line a baking tray with parchment paper.
  • In a bowl, combine the almond flour, coconut oil, maple syrup or agave, and vanilla. Mix until a homogeneous dough forms.
  • Refrigerate the dough in the refrigerator for 20 minutes. This step will make the dough easier to handle.
  • Place the dough between two sheets of parchment paper and use a rolling pin to flatten it to a thickness of about 5 mm.
  • Using a cookie cutter or the rim of a glass, cut out circles from the dough. Gather the excess dough, roll it out again, and repeat the process until you've used up all the dough.
  • Carefully transfer the dough circles to the prepared baking tray, ensuring you leave enough space between each cookie.
  • Bake in the preheated oven for 10-12 minutes, or until the edges are golden.
  • Once baked, remove the cookies from the oven and let them cool completely on the tray.
  • If desired, you can decorate the cookies by adding melted chocolate on top or dipping half of each cookie in the chocolate.

NOTES

  • If the melted chocolate is too thick, add a teaspoon of coconut oil to achieve a smoother consistency.
