4-Ingredient Vegan Almond Flour Cookies (Gluten-Free)

What ingredients do I need to make these 4-ingredient Vegan Almond Flour Cookies?

Here's what you'll need to whip up these delightful almond flour cookies:

    • Almond flour: Almond flour brings a nutty richness and a hint of texture.
    • Coconut oil: The secret to achieving that perfect cookie crunch lies in a touch of coconut oil. Opt for the refined version to keep the flavors harmonious.
    • Natural maple syrup or agave: These natural sweeteners infuse the cookies with a delightful sweetness.
    • Vanilla: The aromatic essence that ties everything together, adding depth and warmth to each bite.
    • Dairy-free chocolate (optional): Elevate your cookie game by drizzling or dipping in melted dairy-free chocolate.

    Pro Tips for Cookie Mastery

You're on your way to becoming a cookie connoisseur, but let's sprinkle some wisdom to make your baking journey even smoother:

    • Smooth Chocolate Trick:
Is your melted chocolate too thick? Add around a teaspoon of coconut oil to achieve that silky, drizzle-worthy consistency.
    • Room Temperature Ingredients:
For a smoother dough and better incorporation of flavors, make sure your coconut oil and maple syrup (or agave syrup) are at room temperature before mixing.
    • Chill Wisely:
If you're short on time, pop the dough in the freezer for about 10 minutes instead of the refrigerator for 20 minutes. It'll do the trick for getting that firm texture.
    • Baking Parchment Mastery:
To make sure your cookies don't stick, consider using a silicone baking mat instead of parchment paper. It provides an extra layer of non-stick magic.
    • Uniform Cookies:
When rolling out the dough, place a rubber band on each end of the rolling pin. This ensures a consistent thickness throughout, resulting in even baking.

    • Chilled Cookie Sheets:
Place your baking tray in the fridge or freezer for a few minutes before scooping the dough onto it. This helps prevent cookies from spreading too much during baking.
    • Revive Stale Cookies:
If your cookies have lost their crispness, place them in a 350°F (176°C) oven for a few minutes. This can help restore some of their crunch.
    • Flour for Stickiness:
When using a cookie cutter, dip it into almond flour before cutting into the dough. This prevents sticking and helps maintain clean shapes.
    • Perfect Chocolate Drizzle:
For a neat chocolate drizzle, place melted chocolate in a small plastic sandwich bag, snip a tiny corner, and use it like a piping bag.

    INSTRUCTIONS

    • Preheat your oven to 355°F (180°C) and line a baking tray with parchment paper.
    • In a bowl, combine the almond flour, coconut oil, maple syrup or agave, and vanilla. Mix until a homogeneous dough forms.
    • Refrigerate the dough in the refrigerator for 20 minutes. This step will make the dough easier to handle.
    • Place the dough between two sheets of parchment paper and use a rolling pin to flatten it to a thickness of about 5 mm.
    • Using a cookie cutter or the rim of a glass, cut out circles from the dough. Gather the excess dough, roll it out again, and repeat the process until you've used up all the dough.
    • Carefully transfer the dough circles to the prepared baking tray, ensuring you leave enough space between each cookie.
    • Bake in the preheated oven for 10-12 minutes, or until the edges are golden.
    • Once baked, remove the cookies from the oven and let them cool completely on the tray.
    • If desired, you can decorate the cookies by adding melted chocolate on top or dipping half of each cookie in the chocolate.

    NOTES

    • If the melted chocolate is too thick, add a teaspoon of coconut oil to achieve a smoother consistency.
