Easy Homemade Seitan Deli Slices

INGREDIENTS
 

  • 1 block of extra firm tofu, (350 g)
  • 2 teaspoon liquid smoke, optional, but adds a smoky taste
  • 3 tablespoon soy sauce
  • 2 tablespoon olive oil
  • 2 tablespoon cornstarch
  • ¼ cup nutritional yeast
  • 2 teaspoon garlic powder
  • 2 teaspoon onion powder
  • 1 ½ teaspoon paprika
  • ¼ teaspoon cumin powder
  • ¾ teaspoon salt
  • Pinch of black pepper
  • 190 g vital wheat gluten, gluten flour

INSTRUCTIONS
 

  • Preheat the oven to 350ºF (176ºC).
  • In a food processor, add all the ingredients except for the gluten flour. Process until you obtain a well-integrated paste.
  • Add half of the gluten flour to the mixture in the food processor. Process the ingredients again until they are fully incorporated.
  • Add the second half of the flour and continue processing. At first, it may look "crumbly," but keep processing until the mixture starts to come together and form a ball.
  • Remove the dough and begin shaping it into a ham-like form (a slightly elongated ball) with your hands.
  • Place the seitan in the center of a piece of parchment paper and wrap it completely.
  • Then, place it on a piece of aluminum foil and wrap it again, making sure it is well sealed. This will help maintain moisture while baking.
  • Place the wrapped seitan on a baking tray and put it in the preheated oven.
  • Bake for approximately 1 hour or until the seitan log is firm and cooked.
  • Once baked, remove the seitan from the oven and let it cool slightly.
  • Carefully unwrap it from both papers and slice it very thinly with a sharp knife.

NOTES

These vegan deli slices can be stored in an airtight container in the refrigerator for up to one week and in the freezer for up to 4 months.
