Batter
120gall-purpose flour, (1 cup)
60gsugar or granulated sweetener, (5 tbsp)
1 ½teaspoonbaking powder

112gcoconut oil, melted, (½ cup)
1tablespoonplant milk
1teaspoonvanilla extract

1tablespoonsugar or granulated sweetener, (12 g)
¼teaspooncinnamon powder

INSTRUCTIONS
Prepare the filling
Preheat your oven to 350°F (176°C).
In a large bowl, combine the diced apples, sugar/sweetener (36 g), cornstarch, cinnamon powder, and orange zest (if using). Mix well until the apples are evenly coated.
Spread the apple mixture evenly in a greased 8x8” baking pan.
Make the batter
In a medium bowl, whisk together the flour, sugar/sweetener (60 g), baking powder, and salt.
Add the melted coconut oil, plant milk, and vanilla extract to the dry ingredients. Mix until just combined. The batter will be thick.
Drop spoonfuls of the batter over the apples, spreading it out as evenly as possible.
Add the sprinkle
In a small bowl, mix 1 tablespoon of sugar with ¼ teaspoon of cinnamon powder.
Sprinkle this mixture evenly over the batter.
Bake
Bake in the preheated oven for 35-38 minutes, or until the top is golden brown and a toothpick inserted into the batter comes out clean.
Let the cobbler cool for a few minutes before serving.
