    BATTER

    How to make this Easy Vegan Apple Cobbler

    Prepare the filling:

    • Preheat your oven to 350°F (176°C).
    • In a large bowl, combine the diced apples, sugar/sweetener (36 g), cornstarch, cinnamon powder, and orange zest (if using). Mix well until the apples are evenly coated.
    • Spread the apple mixture evenly in a greased 8x8” baking pan.

    • In a medium bowl, whisk together the flour, sugar/sweetener (60 g), baking powder, and salt.
    • Add the melted coconut oil, plant milk, and vanilla extract to the dry ingredients. Mix until just combined. The batter will be thick.
    • Drop spoonfuls of the batter over the apples, spreading it out as evenly as possible.

    Add the sprinkle:

    • In a small bowl, mix 1 tablespoon of sugar with ¼ teaspoon of cinnamon powder.
    • Sprinkle this mixture evenly over the batter.

    Bake:

    • Bake in the preheated oven for 35-38 minutes, or until the top is golden brown and a toothpick inserted into the batter comes out clean.

    • 8 g cornstarch, (1 tbsp)
    • 1 teaspoon cinnamon powder
    • ½ teaspoon orange zest, optional

    Batter

    • 120 g all-purpose flour, (1 cup)
    • 60 g sugar or granulated sweetener, (5 tbsp)
    • 1 ½ teaspoon baking powder
    • ¼ teaspoon salt
    • 112 g coconut oil, melted, (½ cup)
    • 1 tablespoon plant milk
    • 1 teaspoon vanilla extract

    Sprinkle

    • 1 tablespoon sugar or granulated sweetener, (12 g)
    • ¼ teaspoon cinnamon powder
