    3 Vegan Mug Cakes in 1 Minute

    Fluffy, delicious and easy to prepare. These vegan chocolate, carrot and lemon blueberry mug cakes are perfect for those cake cravings, but without having to make large portions or invest a lot of time in the preparation. You will love them!

    The cool thing about mugcakes is that as the word says, it is literally cake in a mug and it’s ready in a couple of minutes because it’s cooked in the microwave. Although it can also be cooked in the oven without issues, it just takes a little more time. Just always remember to use microwave-safe mugs or molds or if you use an oven, oven-safe.

    INGREDIENTS
     

    Blueberry & Lemon Mug Cake

    • 1 tablespoon oil
    • 1 ½ tablespoon brown sugar
    • 3 tablespoon non-dairy milk
    • ¼ teaspoon vanilla extract
    • ¼ cup all-purpose flour
    • ½ teaspoon baking powder
    • 2-3 tablespoon blueberries
    • ¼ teaspoon lemon zest

    Chocolate Mug Cake

    • 1 tablespoon peanut butter
    • 1 ½ tablespoon brown sugar
    • 3 tablespoon non-dairy milk
    • 3 tablespoon all-purpose flour
    • 1 tablespoon cocoa powder
    • ½ teaspoon baking powder
    • 15 g dairy-free chocolate chunks

    Carrot Mug Cake

    • 1 tablespoon oil
    • 1 ½ tablespoon brown sugar
    • 3 tablespoon non-dairy milk
    • ¼ teaspoon vanilla extract
    • ¼ cup all-purpose flour
    • ½ teaspoon baking powder
    • ¼ teaspoon cinnamon powder
    • 2 tablespoon grated carrot

    INSTRUCTIONS
     

    Blueberry & Lemon Mug Cake

    • In a large mug or small bowl (microwave safe), add oil, sugar, milk, vanilla and mix.
    • Add flour, baking powder and mix until the ingredients are integrated.
    • Fold in the blueberries and lemon zest.
    • Microwave for 1 minute and 15 seconds (the time may vary depending on the microwave, adjust to your preference of moistness) or bake at 355°F for approximately 5 minutes.
    • Remove from the microwave, let cool slightly and serve with your favorite toppings.

    Chocolate Mug Cake

    • In a large mug or small bowl (microwave safe), add peanut butter, sugar, milk and mix.
    • Add flour, cocoa powder, baking powder and mix until the ingredients are integrated.
    • Add some chocolate chunks on top.
    • Microwave for 1 minute and 15 seconds (the time may vary depending on the microwave, adjust to your preference of moistness) or bake at 355°F for approximately 5 minutes.
    • Remove from the microwave, let cool slightly and serve with your favorite toppings.

    Carrot Mug Cake

    • In a large mug or small bowl (microwave safe), add oil, sugar, milk and mix.
    • Add flour, baking poder, cinnamon powder and mix until the ingredients are integrated.
    • Fold in the grated carrot.
    • Microwave for 1 minute and 15 seconds (the time may vary depending on the microwave, adjust to your preference of moistness) or bake at 355°F for approximately 5 minutes.
    • Remove from the microwave, let cool slightly and serve with your favorite toppings.
