Chocolate Date Bars

Chocolate Date Bars (aka the best vegan dessert ever!). If you are looking for a vegan, healthy, delicious and easy to prepare dessert, this is the recipe! These bars are delicious, made with simple ingredients, crunchy and creamy at the same time… absolutely yummy!

Ingredients

Paste

  • 2 cups pitted dates
  • 3 tbsp maple syrup or date/agave syrup
  • 2 ½ tbsp cocoa
  • ½ tbsp hot water only if the dates are a bit dry
  • 1 cup chopped peanuts or any other type of nut/seed

Chocolate coating

  • 150 g dairy-free chocolate
  • 1 ½ tbsp coconut oil

Instructions

  • Process dates with maple syrup and cocoa.
  • Transfer to a bowl, add the peanuts and mix.
  • Transfer the paste to a piece of parchment paper or silicone mat.
  • Slightly wet your hands and press to shape an even square.
  • Freeze for 2-3 hours.
  • Remove from the freezer and cut into squares or rectangles.
  • To make the chocolate coating, add the chocolate and oil to a bowl. Melt in the microwave or au bain-marie.
  • Using two forks, dip the squares in the chocolate until they are completely coated, let the excess chocolate drip off and transfer to a piece of parchment paper or silicone mat.
  • Freeze until hardened.
  • Optionally you can drizzle some more chocolate on top (just melted chocolate without oil) to make them look cuter and add a little bit of sea salt to give it an extra kick.
  • Store in an airtight container in the refrigerator or freezer.
