    Vegan Palm Hearts and Mango Ceviche ♥

    This is the perfect snack or appetizer for warm days (or not so much hihi), for days where you crave something sour and a little salty (oh man, my mouth is already watering thinking about this vegan palm hearts and mango ceviche), or when you just feel like eating something light, healthy and delicious!

    The best thing about this ceviche is that you only need to chop or slice the ingredients, mix them and voila! A delicious meal made under 10 minutes.

    Where can I find palm hearts?

    You can find palm hearts in most supermarkets, they usually come in a can and are in the olives, pickles, and canned food section.

    Can I substitute some ingredients for this Vegan Palm Hearts and Mango Ceviche?

    Of course! Ideally, do not substitute the palm hearts, because they are the star of the dish, but you could substitute the mango for pineapple, jicama, etc. You could also add grated carrot, cilantro, a little fresh orange juice, etc.

    Can I substitute the tostadas for this Vegan Palm Hearts and Mango Ceviche?

    You sure can! If it’s hard to find tostadas in your country, you can use crackers, crispy pita, chips, or even make your own tostadas by baking corn tortillas or even pita bread in the oven, and dehydrate them until crispy (it is preferable to set a not so high temperature for a longer period of time to ensure that they do not burn, eg. 320-330°F for about 15-20 mins.).

    INGREDIENTS
     

    • 1 large cucumber, diced
    • ⅓ medium red onion, sliced
    • 5-6 palm hearts, sliced
    • 1 mango, diced
    • ½ fresh jalapeño pepper, finely chopped
    • Juice of 2 limes
    • Salt and pepper to taste
    Prevent your screen from going dark

    INSTRUCTIONS
     

    • Mix all the ingredients.
    • Serve on tostadas or crackers with some avocado slices or guacamole.
